We are moving our preview cluster from managed to BYOK. Is it possible to extract values.yaml of the existing cluster to make it easier to recreate it with BYOK?

Sorry, but it’s not possible as every cluster has dedicated configurations. Also, Qovery-managed clusters are not managed the same way as BYOK (values files are not the same, and most of the time the configuration is computed on the fly by the Engine which will configure the chart and other non-helm stuff directly with APIs).
So there is no simple way for us to extract the config as a values file.
