I wonder what possibilities and constraints we have to connect both Github and Gitlab repositories? For example does the account email adress have to match, etc.

For the current version of Qovery, you need to have the same email address on both your account to connect them to the same Qovery account. But with the new upcoming version of Qovery (V3), you will be able to bind accounts with different emails. You can subscribe to the v3 version in beta here
