I noticed that when selecting the type of environment (dev, staging, or production), the tool tip says production will limit what capabilities are available. I imagine there’s an article on it, but I cannot locate it.

Oh ok, the “Production cluster” switch button protects the cluster from being accidentally deleted. That’s it! Nothing more.
One additional piece of information: when upgrading the kube version of your clusters we upgrade first the non-production one before moving to the production clusters. have a look at Clusters | Docs | Qovery
